Split Pea Soup

  My friend Kristie made some Split Pea Soup the other day for a coffee lunch at her house.  I had never in my 41 years of life tasted pea soup because I hate peas.  My friends convinced me I should at least give it a taste.  They said it didn't taste anything like peas.  My friends were right; the soup was delicious.  I'm glad I tried it.  This a very filling dish and the leftovers can be frozen.

Here's the recipe.  It's pretty simple to make and is perfect for a chilly day.
Serves 4-6
2 - 32oz cartons of chicken broth
1 - 16oz bag of split peas
2-2.5 Cups Diced ham
1 heaping cup carrots sliced
3 cloves of crushed garlic
1 Cup diced onions
2 Cups diced potatoes
salt and pepper to taste

Put all the ingredients in a pot and bring to a boil.  Reduce heat to low and simmer until peas and veggies are soft (about an hour).

My family likes our soup thick.  If you want a thinner style soup add more broth to thin it after simmering.
That's it!  Pretty easy huh?
